Ingredients to make Cashew Curry
To make cashew curry, take cashews, chopped onions, chopped cashews, tomatoes, bay leaves, curd, cream, red chilli powder, red chillies, chopped green chillies, cumin seeds, coriander powder, turmeric, kasuri methi, chopped green coriander leaves, ghee, oil as per taste and salt as per taste.
How to make cashew curry
step 1- To make delicious cashew curry, first chop 1 onion, green chilli and tomato finely. After this, take a pan, add ghee in it and heat it on medium flame. When the ghee is hot, add cashew nuts and fry them till they turn golden. When they are fried well, take them out and keep them aside in a bowl. Now take another pan, add oil in it and heat it.
Step 2- On the other hand, pour water in a vessel, add chopped cashew nuts and chopped onion and boil it. After boiling, turn off the gas, drain the water and put both the ingredients in a mixer and grind them. Now take out this paste in a bowl and keep it. Meanwhile, when the oil pan is hot, add cumin and bay leaves in it. When the cumin seeds start crackling, add one chopped onion and fry it. When the onions become soft and golden, add chopped tomatoes and all the spices and fry.
Step 3- When the mixture starts giving out aroma and leaves the oil, add chopped cashew nuts and prepared onion paste to it. Keep in mind that the gravy has to be fried for at least 8-10 minutes. Actually, by doing this its rawness is lost. Now add cream and curd to this gravy and leave it to cook. When the gravy is cooked, add Kasuri fenugreek after crushing it with your palms and stir and then turn off the gas. Finally garnish with fried cashew nuts and green coriander leaves. After this you can serve it with roti or rice.
