The artisans making Tilkut located in the Ghughra valley seem to be constantly busy these days. Tilakut trader Munna Singh says that this sweet is not made throughout the year but only in winter, because sesame and jaggery provide natural warmth to the body during cold weather. The traditional way of making Tilkut makes it even more special.
- Grinding method: Sesame seeds are ground in a wooden mortar for about an hour, due to which the original taste and nutrition of sesame seeds remains intact.
- Mixture of Jaggery: As soon as oil starts coming out from the sesame seeds during grinding, jaggery is added to it. This mixture gives the sweet perfect sweetness and a soft, grainy texture.
Dry fruits increase taste and nutrition
After the sesame and jaggery mixture is prepared, additional ingredients are added to enhance the nutritional value and taste of the sweet:
- Additional Ingredients: Dry fruits like cashews, almonds and pistachios are also added to it.
- Shaping: After this the mixture is molded into different shapes by hands.
