Material
1 cup pigeon pea or moong dal (some people also take a mix of both the dals).
½ teaspoon turmeric
salt as per taste
1 tablespoon desi ghee
1 tsp cumin
4–5 garlic cloves (finely chopped)
2 whole red chillies
a pinch of asafoetida
1 tsp red chilli powder
Green Coriander (chopped)
How to make dhaba-style tadka dal
First wash the lentils thoroughly, add turmeric and salt to the cooker and cook for 3 to 4 whistles. The dal should neither be too thin nor too thick. Real taste comes only in balanced pulses.
Now heat desi ghee in a small pan. Add cumin seeds in it and let it crackle. Then add asafoetida, garlic and whole red chilli. As soon as the garlic becomes light golden, add red chili powder and immediately turn off the gas so that the spices do not burn. Pour this tadka on boiling dal. The aroma that emerges as soon as it is tempered and the golden color of the dal makes it absolutely Dhaba style. Serve the dal by adding green coriander on top.
