Mandua Ki Roti Recipe: If you have not eaten Marua roti yet, then definitely try it this winter. This traditional roti of Jharkhand is not only very tasty, but is also made so soft that it melts in the mouth. The most important thing is that to make this, there is neither any hassle of kneading the dough nor any problem of rolling it. Just a few simple ingredients and 5 minutes of time. Ingredients-
1 cup chooda (poha)
1 cup Ragi flour
1 teaspoon salt
1/2 teaspoon cumin
water as per requirement
Oil or ghee – for applying on the pan
Method of preparation (Jharkhand Style Mandua/Madua Roti Recipe)-
Marua Roti is known for its simple cooking and excellent texture. To make this, first take a cup of chuda and soak it in water for 5 minutes. When the Chura becomes a little soft, put it in the mixer and make a smooth paste. Chura gives natural softness to the roti and without kneading the roti gets excellent texture.
Now take out this paste in a bowl and add one cup of marua flour to it and mix. Marua i.e. ragi flour is rich in nutritious elements and keeps the body warm in cold. After this add 1 teaspoon salt and half teaspoon cumin in it. Cumin improves digestion along with taste.
After this, prepare a mold like solution by adding water little by little. This solution should neither be too thin nor too thick. Just like cheela or pancake batter. Let this solution rest for 2 to 3 minutes so that the dough rises properly and the roti becomes more soft.
Now place the pan on the gas and apply a little oil or ghee and let it heat. When the pan becomes hot, pour a ladleful of batter on the pan and spread it slightly and give it a round shape. Be careful not to spread it too thin otherwise the roti may break.
Now cover the pan with a lid and let the roti cook on low flame for 1 to 2 minutes. The lid will keep the steam inside which will make the roti very soft. Open the lid and see. Turn the roti as soon as the bottom side becomes light golden. Apply some oil or ghee on the top and cook the other side well.
When the roti is cooked from both sides, take it out in a plate. Serve hot Marua roti with chutney, ghee, dal or vegetable.
