To make delicious spinach dhokla, first wash the spinach leaves thoroughly with clean water. After this, boil the spinach on gas for 10 minutes, then put the boiled hot spinach in cold water to cool it.
After the spinach cools down, grind it well, also grind green chillies, ginger and green coriander and make a good paste. After this, mix gram flour, semolina, curd and turmeric in the spinach paste, then add lemon juice and eno to it.
The paste made of gram flour, semolina, curd, turmeric and spinach should neither be too thin nor too thick. Keep this paste covered for 15 minutes and keep the steamer on the gas to heat.

Keep pouring the prepared paste little by little into the steamer molds and keep the gas flame medium. Steam it for about 10 minutes. In this way, the swollen spinach dhokla will be ready.
After this, keep the pan on the gas and heat oil in it. Then add mustard seeds, curry leaves and green chillies. Now mix sugar and a little water in it and pour this tadka over the dhokla. This makes Dhokla soft and tasty. Now let the dhokla cool down and then cut it into the shape of your choice. Sprinkle green coriander on top, serve and enjoy delicious dhokla.
