Bajra Khichdi Recipe: Bajra Khichdi has special importance in winter in rural areas of Rajasthan. This traditional dish, rich in nutrition, helps in keeping the body warm and strengthening digestion. It is prepared from millet, peeled moong dal, some rice and a tempering of desi ghee. Its taste is doubled by the spicy seasoning of cumin, asafoetida, garlic, onion and green chillies. It is especially liked for morning breakfast in rural areas.

So today let us tell you the method and recipe of making Bajra Khichdi. First of all, put millet, peeled moong dal, rice as desired and salt and about a glass of water in the pressure cooker. Let the cooker whistle for about five whistles. After the whistle, open the lid of the cooker, so that all the steam will come out.
Now place the pan on the gas and add two spoons of ghee in it. Let the ghee heat well and then add cumin seeds to it. When cumin turns golden, add asafoetida and turmeric powder to it. Add finely chopped garlic, onion, red chilli and finely chopped green chilli and let it fry well. You can also add some green coriander.
Now put the cooker in which we cooked millet, peeled moong dal and rice in ghee and keep stirring with a spoon on low flame for about 8 to 10 minutes. After being completely cooked, delicious millet khichdi is ready.
