The soil of Rajasthan has as much sweet fragrance as it tastes. This taste is presented in the most beautiful way by Bajra Dhokla, which is considered light, nutritious and very comfortable for the stomach. This Dhokla is very much liked in the village. In the village this Dhokla is made on the stove.
Bajra Dhokla has this quality that as simple as it looks, it is equally deep and heart touching in taste. The satisfaction one gets after eating it is as if the soul is satisfied. In the village, millet dhokla is served mixed with pulses and sesame oil. The taste it has is very wonderful.
Method of making millet dhokla
Villager Sharda Devi has shared the method of making millet dhokla. According to him, first of all take one bowl of millet flour, two tablespoons of gram flour, a handful of soaked gram dal, two teaspoons of cumin, two teaspoons of fennel, two teaspoons of coriander and four to six green chillies, finely chopped coriander as per requirement, one teaspoon of garlic ginger paste, one teaspoon of turmeric powder and one teaspoon of banking soda, two tablespoons of peanut oil and salt as per taste.
Prepare millet dhokla like this in 10 minutes
Now mix everything in a vessel. In a vessel, add coarsely chopped millet flour, gram flour, chilli powder, turmeric powder, coriander, green chilli and fennel, cumin seeds and now mix oil in it. After mixing all these things, knead the dough. Red chilli has to be added to it. The dough has to be kneaded hard, like kneading for roti. Now take small balls, make them round with your hands, flatten them and make a hole in the middle. After this, grease the idli stand and place it in it and apply oil on top. Let it cook on medium flame and check it after 5-5 minutes. Dhokla is ready in 10 minutes.
