Ingredients for making chokha
Brinjal – 2
Potato – 3-4
Onion – 2 finely chopped
Tomato – 2
Garlic clove – 1
Green chilli – 3-4
Ginger chopped – 1 inch grated
Lemon – 1
Pickle masala – 1 tsp (optional)
Green Coriander – 1/4 cup
Mustard oil – 2 tsp
Salt – as per taste.
Method to make Aloo Baingan Chokha
To make chokha of brinjal, potato and tomato, first chop onion, green chilli and green coriander leaves finely. First of all, wash and wipe the potatoes, then apply oil on it and cut it into four pieces. Then cook it in the cooker without water and salt on high medium flame and turn off the gas after 2-3 minutes. Remove the peel from the potatoes and keep them in a plate. Then add tomatoes and brinjal in the same cooker and boil. Keep in mind that apply oil on brinjal and keep it for boiling.
After 2-3 minutes, when the brinjal tomato gets cooked well, clean the brinjal tomato by removing its upper peel. Take a big mixing bowl and add brinjal, tomato and potato and mash it well. Now add chopped ginger-chilli in the mixture or you can also use paste, add pickle masala, salt as per taste, green coriander leaves, lemon juice, chopped onion and other ingredients and mix everything well. Finally add 2 teaspoons of oil and mix. If you do not like raw mustard oil, then you can also add tempering of cumin, mustard seeds, whole red chilli in the chokha. Your flavourful Aloo Baingan Chokha is ready. Garnish it with green coriander leaves and serve. One can enjoy its taste with Litti, Roti, Paratha.
