Elderly Moin, who runs a local restaurant, says that Pathar Ka Gosht was first a part of the royal kitchen during the time of the Nizams. With time, this dish spread rapidly in the city and today it has become the best selling dish in many shops of old Hyderabad. Many shops are so popular that as soon as the counter opens, there is a rush of people and within a short time the entire stock gets exhausted. Especially in the evening, the crowd of people tasting it creates a different atmosphere.
This unique kebab is prepared by roasting it on stone.
Patthar Ka Gosht is a kebab which is specially cooked on hot stones and this is its biggest secret. The cooking method is also very unique. A fire is lit under a large and clean stone so that the stone gets completely heated. The meat is thoroughly marinated with spices and placed on this hot stone and cooked slowly. Roasting on stone gives it a different flavor and its texture is also quite different from other kebabs. It is usually served with onion salad which makes its taste even more delicious.
