Material
for dosa batter
Rice – 2 cups
Urad dal – 1 cup
Fenugreek seeds – ½ tsp
Salt – as per taste
Masala for filling
Potatoes – 4 boiled
Onion – 2 finely chopped
Green chilli – 2
Ginger – 1 small piece
Turmeric powder – ½ tsp
Salt – as per taste
Oil – 2 tbsp
Green Coriander – to garnish
Curry leaves – 6-7
Method of preparation
1. Prepare the batter
Soak rice, urad dal and fenugreek seeds for 6-7 hours.
Grind them to make a smooth batter and let it ferment overnight.
Add salt to the batter and mix well.
2. Make the masala filling
Heat oil in a pan, add curry leaves, green chillies and ginger and fry.
Add onion and cook until light golden.
Add turmeric and salt, then add mashed boiled potatoes.
Mix well, add green coriander and turn off the gas.
3. Make Dosa
Heat the pan and apply light oil.
Spread the batter thinly and add some oil on the edges.
When the dosa becomes crisp, place the potato masala in the middle and fold it.
