Make Schezwan Vermicelli Upma at home like this-
Ingredients (for 2 servings)
1 cup vermicelli
1 carrot (finely chopped)
1 onion (finely chopped)
1 tomato (finely chopped)
1 capsicum (chopped)
2 green chillies (finely chopped)
1/4 cup green peas
1 teaspoon ghee
1 teaspoon oil
salt as per taste
2 spoons schezwan chutney
2 spoon tomato sauce
1 tsp Schezwan Fried Rice Masala
Coriander leaves (for garnish)
2 cups water
Method of preparation (step by step)-

First of all, heat 1 teaspoon ghee in a pan. Add vermicelli in it and roast it on low flame while stirring continuously till it turns golden. Now add 2 cups of water and cook for about 5 minutes, until the vermicelli becomes soft. After this, filter out the excess water and keep the vermicelli aside.
Now heat 1 teaspoon oil in another pan. As soon as the oil is hot, add chopped green chillies and onions and fry until it becomes light golden. After this add carrots, capsicum and green peas. Cook the vegetables on high flame while stirring for 2-3 minutes so that they remain slightly crunchy.
Now add salt as per taste and Schezwan fried rice masala. Cover the pan and let it cook for 2 minutes, so that the vegetables get cooked properly. After this add finely chopped tomatoes and cook until the tomatoes become slightly soft.
Now add boiled vermicelli into the pan and mix everything well. After this, add Schezwan chutney and tomato sauce and stir on low flame for 2-3 minutes, so that the taste of the spices gets absorbed well in the vermicelli.
Finally add finely chopped coriander leaves and turn off the gas. Your Schezwan Fried Vermicelli Upma is ready. Take it out in a hot plate and if you wish, add some ghee on top and serve. This recipe tastes great and gets ready quickly.
