A sweet made in Rohtas of Bihar is very much liked among the people of the surrounding areas as well as other people of the country. Only one confectioner sells 30-40 kilos of this sweet in a day. From this you can estimate how much this sweet will be sold in a day in just one area including other shops in that area.
A unique sweet from Bikramganj in Rohtas district of Bihar is liked not only in Bihar but throughout the country because of its unique taste and sweetness. Local people call it ‘Piau’ while confectioners jokingly call it ‘Atom Bomb’. People find its taste very good.
Rohtas’s famous confectioner Ramji Seth has been making this sweet for the last 30 years. He says that whoever tastes it once, he searches for it again and again. He told that this sweet is sold as soon as it is made.
This sweet starts with making paneer by boiling fresh milk. After boiling the milk, fresh chhena is extracted which is the main ingredient of this sweet. This later takes the form of the delicious ‘Atom Bomb’.

After making paneer, about 50–100 grams of semolina is added to it. Knead it well and make a soft mixture. Then it is given the shape of small balls. These shells are the foundation of the sweet.
After the chhena balls are prepared, they are put in boiling syrup. After some time, the confectioner stirs them gently and waits for the syrup to start foaming. Foam is considered the most important part of this sweet.
Confectioners say that to make the foam faster, a little color or alum is added to the syrup. Along with this, light water is also added to the syrup, due to which the foam rises rapidly and the balls are completely covered with it.
Ramji Halwai tells that when these balls are completely covered in foam twice, then understand that the ‘Atom Bomb’ is ready. During this time the size of the balls increases and their color starts turning red. They are taken out only when they turn golden-red.
After being removed from the foam, this sweet is put in light syrup, where it absorbs the last sweetness. Ramji tells that he sells 30 to 40 kg every day. Its price ranges from Rs 300 to Rs 350 per kg. People coming to Rohtas definitely taste it and many people come here just for this sweet.
