Traditional recipe for making Kafli
First of all, fresh green spinach is taken, which is washed thoroughly and chopped finely. Then the pan is heated and one spoon of ghee is poured into it.
Now comes the real secret of the mountain taste, Jakhiya or cumin. The fragrance of their tadka makes the whole house fragrant. As soon as the tadka is ready, onion and then spinach is added. Gradually the color of spinach darkens and it becomes thicker.
After this, a little rice flour or wheat flour is added, which gives Kafli its traditional thick texture. Salt, green chilli and a little turmeric… and that’s it, this Kafli is ready by cooking on low flame.
