Housewife Ritu told that making guarphali curry is very easy. To make this, these ingredients are required: 500 grams of guarphali, 1 finely chopped onion, 1 tomato, 1 green chilli, 6 to 7 cloves of garlic, ginger paste, cumin, oil 2 tbsp, white sesame 1 tsp, asafoetida, turmeric 1 tsp, red chilli powder 1/2 tsp, dry mango powder or lemon juice, salt as per taste, some finely chopped green coriander.

According to housewife Ritu, preparation of guarphali vegetable is started by removing its stalk and side fibers, due to which the pod becomes soft and easy to eat. After this, the pods are cut into pieces of equal size and boiled with some water and salt on medium flame for 2 to 3 minutes. The water from the boiled pods is drained and separated. After this, cumin seeds are heated by heating oil in a pan, then add sesame seeds, asafoetida, finely chopped green chillies, ginger and onion and fry till it turns light pink to prepare an aromatic base, which enhances the taste of the vegetable.
After this, to enhance the taste of the spices, add turmeric powder, red chilli powder and coriander powder and fry for a few seconds, so that the aroma of all the spices comes out well. After this, tomatoes are added and cooked on medium flame until they become soft and dissolve in the spices and start releasing oil. In this masala, boiled guarphali and salt as per requirement are added and the vegetable is cooked on low flame for 10 to 15 minutes while stirring well. Lastly, the taste is balanced by adding dry mango powder or lemon juice and green coriander and roasted sesame seeds are added on top. In this way the traditional Rajasthani Guarphali curry is prepared.
