Railway Style Tomato Soup Recipe: Railway Style Tomato Soup.
Material-
Tomato – 500 grams (chopped)
Onion – 1 big (chopped)
Beetroot – 1 small slice
Garlic – 4 cloves (chopped)
Ginger – 2 inch piece (roughly chopped)
Green coriander – a little
Bay leaf – 1 small
Cumin – 1 tsp
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Salt – as per taste
Butter – 1 tsp/small piece
Tomato Sauce – 1 tablespoon
Sugar – ½ tsp
Black pepper – as per taste
Water – about 500 ml
Bread croutons – as desired
Method to make Railway Style Tomato Soup-
step 1:
First of all, wash tomato, onion, ginger, garlic and beetroot thoroughly and chop it coarsely. Keeping all the ingredients ready makes soup easier.
Step 2:
Now place a heavy bottomed kadhai or pan on the gas. Add butter in it and let it melt on low flame. As soon as the butter becomes hot, add cumin and bay leaves to it. As soon as the aroma starts coming, add chopped onion and fry till it becomes light golden.
Step 3:
As soon as the onion becomes transparent, add garlic and ginger. Fry them on low flame, so that the rawness goes away and the aroma comes out good.
Step 4:
Now add chopped tomatoes, piece of beetroot and some green coriander in the pan. Fry the vegetables while stirring until the tomatoes become soft.
Step 5:
After this add red chilli powder and coriander powder and fry lightly. Now add about 500 ml water and add salt as per taste. Cover the pan and let it cook on low flame for 10-12 minutes, so that the vegetables get completely cooked.
Step 6:
When the vegetables are cooked, turn off the gas and let the mixture cool down a little. After it cools down, take out the bay leaves and grind the rest of the mixture in a mixer to make a smooth puree.
Step 7:
Now strain the puree through a sieve, so that the soup becomes very smooth and like railway style.
Step 8:
Pour the strained puree back into the pan. Add some water as per requirement and keep the consistency medium. Add sugar and tomato sauce in it and mix well.
Step 9:
Cook the soup on low flame till it boils. Turn off the gas, sprinkle black pepper on top and if desired, add bread croutons and a little butter and serve hot.
