Muzaffarpur. The demand for local and traditional vegetables increases during the winter season. One of these is Sanai flower greens, which is very much liked during cold days. From rural areas to urban kitchens, saag made from Sanai flowers has a special identity. Apart from taste, this greens is also considered beneficial from health point of view, which is why with the arrival of winter, good consumption of Sanai flowers is seen in the markets.
It is especially liked in winter
According to local vegetable vendors, people turn more towards green and local vegetables in winter. Sanai flower greens are easily available in this season and it is also relatively easy to prepare. This is the reason why women at home are especially including it in lunch or dinner.
To make Sanai flower greens, first of all the flowers are washed thoroughly with clean water, so that the soil and dust stuck in them is completely removed. After this, the pan is heated and mustard oil is poured into it. When the oil is well heated, put the flax flowers in it and fry them well on low flame. When the flowers become slightly soft and their rawness goes away, they are taken out from the pan.
Feels like Panchforan’s splash
After this, mustard oil is poured again in the same pan and Panchphoran is added to it. Panchphoran includes mustard, fenugreek, cumin, fennel and black mustard. As soon as the spices crackle, finely chopped onion and green chillies are added to it and fried until it turns golden. Then the masala prepared by grinding garlic, mustard, ginger, cumin and black pepper is added to it.
This special item is needed to enhance the taste
Now add turmeric powder, chilli powder and salt as per taste and fry the spices well so that the aroma starts coming out. After this, to increase the taste and quantity of the greens, swollen gram dal or peas are added and roasted lightly, so that its rawness goes away.
Finally add water, cook…sag is ready.
When all the ingredients are roasted well, then pre-roasted Sanai Saag is added to it. If juicy vegetables are liked then water is added as per requirement. After adding water, the pan is covered and allowed to cook for about five minutes. In this way, delicious Sanai flower greens are prepared, which is especially liked in winters.
