Lehsuni Methi Recipe: Eating habits have a direct impact on our health during the winter season. In such a situation, dishes made from green vegetables and local spices strengthen the body. Garlic Fenugreek is one of these traditional and effective vegetables. Fenugreek has a hot nature, which warms the body from within and protects from seasonal problems like cold and cough. Garlic strengthens the immune system due to its anti-bacterial properties. This is the reason why in Ayurveda and home medicine this combination has been described as the best for winter.
Jalore’s housewife Neeta Soni, while talking to Local 18, has shared a special way to give restaurant-like consistency to this vegetable. He told that a special paste of peanuts, white sesame seeds and roasted gram flour is mixed in it. This paste not only gives an excellent texture to the vegetable, but also increases its nutritional value manifold. The good fats present in peanuts and sesame seeds are very beneficial for the skin and joints in winter.
Easy method to make: step-by-step
To make garlic fenugreek, first wash fresh fenugreek and separate its thick stalks. Heat oil in a pan and fry cumin seeds and a lot of garlic, then add fenugreek seeds and cook until its water dries up. Prepare the masala of onion, tomato, ginger and green chilli by heating oil or ghee in a separate pan. When the masala starts releasing oil, add the prepared paste of peanut-sesame-gram flour to it. Finally add roasted fenugreek and cook it covered on low flame.
This vegetable is a ‘superfood’ for health
This vegetable is not only wonderful in taste, but its health benefits are also countless. It makes the digestive system smooth and works like a panacea for joint pain. Finally, by adding one spoon of desi ghee, both its aroma and taste are doubled. If you serve it with hot bajra or wheat roti, it turns the winter meal into a royal experience.
