The process of making this unique vegetable is quite simple and natural. First of all, bathua, spinach, radish leaves and mustard leaves are washed with clean water and chopped finely. After this, they are put in the cooker and boiled well for at least 15 to 20 minutes. After boiling, the extra water from these vegetables is squeezed out and kept in a separate vessel. The nutritional value of these green vegetables remains intact after boiling on traditional stove or gas.
Buttermilk and millet flour tadka
In the next step, fresh buttermilk is taken in a pan and boiled green vegetables are mixed well in it. To make the vegetable thick and nutritious, a little millet flour is added to it, which is called ‘Alan’ Lagana in the local language. After this, home-ground spices like red chilli, coriander, turmeric, salt and asafoetida-cumin are added to it. This mixture is kept on the gas and continuously stirred with a spoon until it boils. After cooking thoroughly for about 20 minutes, asafoetida and cumin seeds are added to it.
