Jodhpur: Mustard greens are specially prepared in the homes and dhabas of Rajasthan during the winter season. Not only in Rajasthan, but in the entire North India, mustard greens are eaten with great gusto during winters. While the lush greenery of mustard in the fields gives comfort to the eyes, the greens made from the same mustard are also considered very beneficial from health point of view. Mustard greens are especially served with Makki ki Roti and the desi butter added on top doubles its taste. During cold days, this food helps in keeping the body warm and also helps in increasing immunity.
Ingredients required to make Sarson Ka Saag: To make Sarson Ka Saag, mainly fresh mustard leaves are taken. Apart from this, the taste of greens becomes even better by adding spinach and bathua. Ingredients include green chillies, ginger, garlic, onion, salt and corn flour. Desi ghee or butter, cumin, dry red chilli and asafoetida are used for tempering. Some people like to add a little more garlic to enhance the taste, which gives a local aroma to the greens.
Mustard greens recipe
First of all, mustard, spinach and bathua are cleaned and washed thoroughly. After this, they are roughly chopped and put in a cooker or a big vessel and boiled. After boiling, these leaves are ground coarsely with the help of a mixer or churner. Now heat ghee or butter in a pan, add cumin, asafoetida, garlic and onion and fry. When the onion becomes light golden, then boiled and ground greens are added to it. After this, adding salt, green chillies, ginger and a little corn flour, the vegetables are cooked well on low flame.

Serving mustard greens with corn roti is a different pleasure, especially when this greens is prepared in Punjabi style on dhaba lines.
