Material
Mustard leaves – 250 grams
Onion – 1 medium (finely chopped)
Green chilli – 2
Ginger – 1 inch piece
Garlic – 4-5 cloves
Tomato – 1 medium
Turmeric powder – ¼ tsp
Red chilli powder – ½ tsp
Salt – as per taste
Mustard oil – 2 tbsp
Green Coriander – to garnish
Method of preparation
First of all, wash the mustard leaves thoroughly and chop them finely.
Heat mustard oil in a pan and cook till smoke comes out.
Add garlic, ginger and green chillies and fry.
Add onion and cook until golden.
Add tomatoes and fry until soft.
Now add turmeric, red chilli and salt.
Add chopped mustard leaves and cook on low flame for 10-12 minutes.
When the greens become soft and the water dries up, turn off the gas.
Garnish by adding green coriander on top.

Serve Sarson ke Saag Bhurji with hot roti, paratha or bajra roti. If you want, add some ghee on top, the taste will double.
