In the cold winter of Haryana, people often suffer from problems like cold and cold in the body. In such a situation, making and eating Punjabi Pinni Laddu has become common in Haryanvi kitchen also. These laddus are not only delicious, but also help in warming the body and increasing immunity. The special thing is that their real enjoyment is enjoyed only in winter.
To make Pinni, wheat flour, boora, ghee, almonds, cashew nuts, pistachios, dry coconut, melon seeds, gum and cardamom powder are required. Measure the ingredients and keep them aside. Almonds, cashews and pistachios can be kept separately for decoration. Keep all the ingredients clean and ready so that it is easy to make Pinni and the taste is also good.
First of all, heat ½ cup ghee in a pan, add gum to it and fry on low flame. Keep stirring it continuously so that the gum swells well and turns light brown. Do not fry on high flame, otherwise the gum will look brown from outside but will remain raw from inside. After roasting, take out the gum in a plate.

Now add almonds to the remaining ghee and fry on low flame till it turns golden brown. After this add cashews and roast until their color changes slightly. Lightly roast the melon seeds in a separate pan and also roast the coconut until it turns light in color. After roasting all the dry fruits, take them out in a plate and keep them aside.
Add ½ cup ghee and flour in a pan with ghee. Fry the flour on medium flame while stirring continuously until it turns light brown. When a good aroma starts coming, stop frying. If the dough seems dry, you can add some more ghee. When the flour cools down, grind cashews, almonds and gum coarsely.
Now add roasted flour, gum, dry fruits, coconut and melon seeds in a bowl and mix well. After this add boora and mix well again. If the mixture seems a little dry, add remaining ghee and mix. Finally add cardamom powder and mix the entire ingredients well.
Take small portions of the mixture and press them in your hands to make round pinni. Garnish with cashews, almonds or pistachios on top. Prepare all the pinni in the same manner. When the pinni cools completely, store it in an airtight container. Eat as per need in winter and make the body warm and strong.
