These ingredients are required to make Bharwan Dum Aloo
To make Shahi style stuffed Dum Aloo, we need potatoes, tomatoes, finely chopped coriander, finely chopped ginger, ginger, flour, finely chopped green chillies, green chillies, cumin seeds, cheese, oil, finely chopped cashew nuts, turmeric powder, coriander powder, red chilli powder, Kasuri methi, raisins, cinnamon, cloves, black pepper, whole black cardamom and salt as per taste.
How to make Stuffed Dum Aloo
step 1- To make Shahi Bharwan Dum Aloo, first break the cheese and crumble it. Now add ginger, raisins, green chillies, ½ teaspoon salt, finely chopped cashews and green coriander and mix properly. In this way the stuffing is ready. After this, wash and peel the potatoes. Now cut the potato into two parts from the middle and hollow it out with a knife or any sharp object.
Step 2- Now fill the previously prepared stuffing in the hollow part of the potato with the help of a spoon. After this, take flour, add some water and salt as per taste and make a batter. Now put the stuffed potatoes in this solution and wrap them well. After this, we will fry these potatoes in oil on low flame. When the color of the potatoes becomes golden, turn off the flame and take them out in a plate.
Easy way to make gravy
step 1- To make Shahi Bharwan Dum Aloo Gravy, first put oil in a pressure cooker and heat it. Now add cumin seeds to it and let it crackle. After this, add cloves, black pepper, cinnamon and peeled large cardamom seeds and fry. Now add turmeric and coriander powder to it and fry it for 1-2 seconds while stirring with a spoon. Now add tomato-ginger-green chilli-cashew paste and stir and also add red chilli powder on top. Remember that it has to be fried until the spices and oil start appearing separately.
Step 2- Now add Kasoori salt, Kasoori fenugreek and 1 glass of water to the spices and cook this gravy till it comes to a boil. After this, add potatoes in this gravy and close the cooker and let it whistle for 1 whistle. Now reduce the flame and let the potatoes cook on medium flame for 4 to 5 minutes. After this, turn off the flame and open the cooker after 20 minutes. Now garnish the ready Shahi Bharwan Dum Aloo with green coriander. You can serve it with roti, paratha, puri or rice.
