How To Make Amla Rasam Recipe: If we talk about any desi drink to keep the body warm from within in winter and strengthen the immunity, then Amla Rasam is a great option. This traditional recipe of South India is considered a perfect combination of taste and health. Sour, mildly spicy and aromatic Amla Rasam not only provides relief from cold and cough but also improves digestion. Amla is rich in Vitamin C, which Helps in increasing immunity in winter. The special thing is that this rasam is ready in minutes and it can also be drunk like soup. So let us know the easy method of making it.
Ingredients for Amla Rasam (for 500 ml rasam)-
Amla – 6 large
Green chilli – 2 (sliced)
Green coriander – a handful
Black pepper – 1 tsp
Cumin – 1 tsp
Water – about 600 ml
For tempering-
Mustard – 1 tsp
Cumin – ½ tsp
Asafoetida – ½ tsp
Dry red chilli – 2 (broken)
Curry leaves – a few leaves
Ghee – 1 tsp
Method to make Amla Rasam-
-First of all, wash the gooseberry, cut it into small pieces and remove the seeds. Now add amla, green chilli, black pepper, cumin and green coriander in a mortar or mixing bowl. Grind them coarsely. Keep in mind that the mixture should not become too paste, keep it slightly coarse, only then the real taste of rasam will come out.
-Now put this ground mixture in a heavy bottom pan or Eya Chombu. Mix about 600 ml water in it and keep it on gas on low flame. Do not cover the rasam while boiling. As soon as the rasam starts boiling lightly at the edges and the aroma starts rising, turn off the gas. Rasam should not be boiled too much, otherwise the taste of Amla may become bitter.
-Now prepare the tadka. Heat ghee in a small pan. Add mustard seeds in it and let it crackle. After this add cumin, dry red chilli, asafoetida and curry leaves. As soon as the aroma starts coming from the tempering, immediately add it to the hot rasam and cover it with a lid, so that the aroma of the tempering gets absorbed deep inside.
-Serve the prepared Amla Rasam hot. You can also eat it with rice or drink it in a cup like soup.
