The first and most important step is to prepare the dough properly. Gradually add water to wheat flour and knead it well. The dough should neither be too hard nor too loose. Soft and smooth dough helps in making the roti soft.
Now keep the kneaded dough covered for 20 to 30 minutes, so that it gets set and becomes easier to roll. The second important thing is that the method of rolling the roti should be correct. While rolling the roti, try to ensure that it is of uniform thickness.
While rolling the roti, make sure that there is equality between the edges and the middle, otherwise while baking the roti, air will accumulate on one side and come out and it will not be able to rise completely. Now comes the turn to heat the pan. Before baking roti, the pan should be well heated.

If the pan is cold, the roti may stick and if it is too hot, the roti may burn. Therefore, if the roti is cooked at the right temperature, it gets cooked properly and starts rising.
First fry the roti lightly on one side and then turn it on the other side and cook for a few seconds. When light brown spots start appearing on the other side, turn again and apply light pressure with a cloth or ladle. Due to this, steam fills the inside of the roti and it starts puffing up.
