What is the secret of ‘Black Benne Dosa’?
In making Benne Dosa, a lot of fresh white butter is used instead of ordinary oil or ghee. It is very crisp from outside and very soft and spongy from inside. This dosa is also called ‘Black Benne Dosa’ because a lot of dried curry leaves powder is sprinkled on it. This powder, when mixed with butter, gives a slightly black color to the dosa, which enhances its taste manifold. To make Black Benne Dosa, firstly the Dosa batter is spread in a round shape on a hot pan. After this, a lot of white butter is poured over it and mixed with a special red chutney. For taste, 2 to 3 spoons of curry leaves powder and spicy potatoes are added to it. Finally again 3-4 spoons of butter is added and it is left to cook. After removing the dosa from the pan, it is once again garnished with curry leaves powder and butter.

This dosa is so tasty and flavorful that there is no need for traditional sambar along with it. However in Mumbai it is usually served with tomato chutney, sambar and coconut chutney.
