Ballia unique Litti: Ballia’s identity is Litti-Chokha, but now the unique form of its indigenous heritage ‘Father of Litti’ i.e. Litta is surprising the people. It is many times bigger than ordinary litti and is famous for its tremendous taste. Piyush Upadhyay, a resident of Chaura, Ballia, says that even today Litta is prepared in the traditional way in the villages. To make it, about 10 kg of wheat flour is kneaded and the cakes made from cow dung are baked with a special technique on high fire. When the Litta swells and starts bursting after cooking by pressing it in ash, then it is considered completely ready. Served with hot chokha or tempered dal, this litta fills the stomach of about 40 to 45 people and presents a unique example of rural culture.
