First of all take 4–5 fresh red carrots. Wash them thoroughly, peel them and grate them. The fresher the carrots are, the better will be the color and taste of the kheer.
Now pour 1 liter full cream milk in a heavy bottomed kadhai or pan and boil it on low flame. Keep stirring the milk occasionally so that it does not stick to the bottom.

When the milk boils, add grated carrots to it. Let the carrots cook well in the milk while stirring continuously on low flame. In about 15–20 minutes, the milk will start thickening a bit and the carrots will become soft.
Now add sugar as per taste. Also add cardamom powder and chopped dry fruits (cashew nuts, almonds, raisins). Mix everything well and let it cook for 5-7 more minutes, so that the sugar dissolves completely and the kheer becomes fragrant.
When the kheer becomes thick and creamy, turn off the gas. Garnish with some dry fruits on top. Carrot kheer can be served either hot or cold. Apart from being delicious in taste, it is also rich in nutrition.
