This coffee named Kopi Luwak is prepared from beans that pass through the digestive system of an animal named Asian Palm Civet. This small cat-like mammal is found in many areas of Indonesia and South-East Asia and is called Luwak in the local language. The special thing is that this animal eats only fully ripe and best quality coffee cherries.
This habit of civet plays an important role in making Kopi Luwak special. This animal acts as a natural quality checker and ignores spoiled or unripe cherries. For this reason only the best quality coffee beans reach the further process.
When a civet eats a coffee cherry, the pulp is digested, but the beans remain intact. Due to the natural enzymes present in the animal’s stomach, a special kind of fermentation process takes place in the beans, which reduces the bitterness and makes the taste of coffee more smooth and rich.
After digestion, these beans come out with stool. After this they are carefully collected, thoroughly cleaned, dried in the sun and then roasted. The coffee prepared after the entire process is completely hygienic and safe to drink.
The reason for the very high price of this coffee is its limited availability. Only a very small quantity of usable beans can be obtained from civet and the process of collecting them is also quite laborious. Since it cannot be produced on a large scale, its supply remains limited and it falls into the luxury category.
The price of Kopi Luwak coffee in the international market ranges from around ₹60,000 to ₹70,000 per kilogram. Whereas in luxury cafes and five star hotels abroad, the price of a cup can be between ₹ 3,000 to ₹ 5,000.
