Garlic Paratha is a very tasty and aromatic recipe of North India, which is eaten with great gusto from breakfast to lunch and dinner. When hot garlic paratha is served with butter, curd or pickle, its taste doubles. Garlic not only enhances the taste of food, but is also considered beneficial for health. If you want to try something different and quick to make paratha at home, then garlic paratha is a great option.
Ingredients to make Garlic Paratha include wheat flour, fresh garlic, green chillies, coriander leaves, salt, celery, red chilli powder and ghee or oil. First of all, take finely chopped or crushed garlic in a bowl. Add green chilli, coriander leaves, salt and some celery to it. Now add this mixture to wheat flour and knead a soft dough with lukewarm water. Keep in mind that the dough should not be too hard, only then the parathas will become soft. Cover the dough and let it rest for 10–15 minutes.
After the dough has set, make balls out of it. Take a ball and roll it lightly. Now apply some ghee or oil on it and sprinkle dry flour. Then fold it and give it the shape of paratha and roll it again. In this way the paratha will become layered and will taste more delicious. If you want, you can also apply garlic paste directly on the paratha and roll it, this brings out the garlic flavor more.
Now heat the pan and put the rolled paratha on it. Cook the paratha on both sides on medium flame. When light bubbles start appearing on one side, turn it over and apply ghee or oil on top. Bake the paratha until it becomes golden and crisp. By roasting on low flame, the garlic gets cooked properly and its rawness goes away, which makes the paratha even more delicious.
Serve garlic paratha hot. It can be eaten with plain curd, green chutney, tomato chutney or pickle. This paratha also helps in keeping the body warm in winter. The anti-bacterial and anti-inflammatory properties present in garlic are helpful in increasing immunity. If you want a healthy option, you can use less oil instead of ghee.
