Of these, the highest risk is in leafy vegetables and potatoes. The nitrates present in them get converted into nitrites when heated again. This can cause problems like methemoglobinemia, in which the oxygen capacity of the blood reduces. This can cause dizziness, weakness, vomiting and even blue-skin syndrome in children. There is also a risk of food poisoning
