First of all, take out soya chunks and all the vegetables and keep them on the kitchen platform. Put broccoli in water and keep it aside. Put soya chunks in a small vessel, then add salt and water and boil. After two boils, remove it from the gas and keep it aside.
Wash the steel pan or frying pan and keep it on low flame. Now put the soya chunks in a big strainer, wash them with water and keep them over a vessel so that the excess water drains out. Wash and start cutting carrots and broccoli. When the water in the pan dries, add oil in it. When the oil is hot, put the carrots and broccoli in the pan.

Mix the vegetables lightly and also start peeling the peas. Keep stirring the vegetables in between. After the peas are ready, wash them and put them in the pan, mix and cover with a lid and let it cook. Keep in mind that the vegetables are completely clean. If you want, you can also use packaged peas without peel.
Now wash the cabbage and start cutting it. Keep mixing the vegetables by removing the lid occasionally. As soon as the cabbage is cut, put it in the pan and cover it with a lid. After this, wash and cut green onions. After cutting it, put it in the pan and mix it. Then add salt, chilli powder, cumin powder and black pepper powder and remove the lid and cook.
Squeeze out the water from the soya chunks and add it to the pan and fry for 2 minutes. Wash coriander and mint leaves, cut them and put them in the pan. Mix everything well and turn off the gas. Now add chaat masala and lemon juice, mix and keep covered for 2 minutes. Your special soya vegetable fry is ready.
For this recipe, you need one and a half cup soya chunks, 5-6 broccoli florets, 1 carrot, 2 green onions, 14-15 peas, 1/2 small cabbage, 1/2 cup chopped coriander leaves and 1/2 cup chopped mint leaves. Apart from this, 1/4 cup mustard oil, 1 teaspoon chilli powder, 1 teaspoon cumin powder, black salt as per taste, 1/2 teaspoon black pepper powder, 1 teaspoon chaat masala and 1/4 cup lemon juice (as per taste) will be used.
