Cut the jaggery into small pieces and melt it with some water. Do not boil the mixture too much, just prepare a thick syrup. This will make the laddus properly sticky and of good shape. After melting the jaggery, you can also filter it once so that any dirt gets removed and the laddus do not hit your teeth.
Add roasted sesame seeds to jaggery syrup and mix well. If you want, you can add cardamom powder. It enhances the taste and the laddu has a mild aroma. Khoya and dry fruits (if added) are also added at this stage.
Let the mixture cool for a while. If the mixture remains hot then hands may get burnt and it will be difficult to make laddus. When the mixture cools slightly, it sets easily in the hand. However, do not cool it too much otherwise the laddus will not bind.
Now apply some ghee on your hands and shape the mixture into a round shape. Divide the mixture into equal parts, so that each laddu is equal in size and beautiful. Once the laddus are ready, store them in an airtight container. You can eat them after keeping them for months. It is beneficial to take one laddu with jaggery. This saves you from cold and the taste is also excellent.
