Suji Uttapam – Healthy and Quick Breakfast: Suji Uttapam is an easy dish associated with South Indian taste. To make this, prepare a thick solution by mixing one cup semolina, half cup curd and water as required in a vessel. Cover it and keep it for 10 minutes so that the semolina swells. Now add salt as per taste and half a spoon of eno and mix gently. Pour some oil on a hot pan and spread a ladleful of the batter. Add finely chopped onion, tomato, green chilli, capsicum and coriander on top. Cover and cook on low flame till it turns golden from both the sides. Serve prepared uttapam with coconut chutney or sambar.
Semolina Dhokla – Light and Soft Snack: Semolina Dhokla is a great option for those who like light and oil-free snack. Make a smooth batter by mixing one cup semolina, half cup curd, salt and water and keep for 10 minutes. After this add one spoon of Eno and immediately pour the solution into the greased mold. Steam in cooker or steamer for 10–12 minutes. When it cools down, cut the dhokla into pieces. Now heat oil for tempering, add mustard seeds, green chillies and curry leaves and pour this tempering on the dhokla. This dhokla is perfect for evening hunger.

Semolina Potato Sandwich (without bread): If there is no bread in the house, then Semolina Potato Sandwich is a great alternative. For this, prepare a solution by mixing semolina and one and a half cup curd with some water and keep it for 10 minutes. Mash the boiled potatoes and add salt, red chilli and green coriander. Now put some oil on the pan and spread the semolina batter, place a layer of potatoes on it and pour some more batter on top. Bake on low flame until golden on both sides. This sandwich is also good for children’s tiffin.
Suji Appe – Favorite of children and adults: Suji Appe is a quick recipe with less oil. Prepare the solution by mixing one cup semolina, half cup curd, some water and salt and keep it for 10 minutes. Then add half spoon of eno. Apply light oil in the appe pan and pour the batter and add onion, capsicum or carrot on top. Cover and cook on low flame until golden on both sides. Serve hot appe with coconut chutney or tomato sauce.
Besan Dhokla – Traditional Taste: Besan Dhokla is a traditional snack loved in every home. Mix half a cup of curd, salt and water in a cup of gram flour and make a smooth batter and keep it for 10 minutes. Then add one spoon of eno to it and immediately pour it into the mold and steam for 12–15 minutes. When it cools down, cut it into pieces. Add mustard seeds, green chillies and curry leaves seasoning on top. If you want, you can add two spoons of light sweet water, this makes the dhokla even softer.
