Matthe Ke Aaloo Recipe: When you are looking for comfort food which is excellent in taste and does not require much hassle in making, then you can make potatoes made from buttermilk or curd. Its recipe may vary slightly according to the region but the main ingredients are only two, curd or whey and potatoes.
For this, first of all take four to five boiled potatoes and mash them well. The mash has to be done in such a way that some potatoes remain in slightly larger size and some remain mashed, meaning completely mixed and keep it aside. Keep two bowls of buttermilk nearby. It is better if the whey is slightly sour.
Now you have to put the vessel on the gas. Add two spoons of oil in it with a big spoon, sprinkle mustard seeds, asafoetida and cumin seeds in it. When it crackles, add basic spices i.e. turmeric, coriander, chilli etc. in it. Cook all these. Some people also add ginger-green chilli paste at this time, this is optional.
When the spices are cooked, you have to add buttermilk to it. One thing has to be kept in mind. The gas should be switched off while adding the whey. Because, there is a fear of it bursting. Only after turning off the gas, add the whey in whatever quantity you want to make.

Switch off the gas and keep mixing for a while, then after two-three minutes turn on the gas on low flame and then when the whey starts boiling, add salt. After adding this, add the mashed potatoes that you have kept nearby.
After adding mash shalu, leave it for some time to cook. After 10-15 minutes it will start boiling and your delicious buttermilk potatoes will be ready. It tastes delicious and also helps in saving life at the last moment. Some people also fry the potatoes separately in spices first. After that add whey in the same mixture. Just add salt later otherwise the curd potatoes may burst.
