Wash basmati rice thoroughly and soak it for 30 minutes. After this, add cardamom, cloves, cinnamon, bay leaves, black pepper, rose water, oil and salt in boiling water. Now add rice and cook on high flame till only 80 percent.
Add green chilli, ginger, garlic, mint and green coriander in a jar. Make a fine paste by mixing two spoons of water. This chutney gives fresh taste and aroma to biryani, so definitely add it.

Heat oil and fry the onion until it turns golden brown. Keep the curd in a strainer and remove excess water. Now prepare the base of marination by mixing spices, salt and green chutney in curd.
Add cheese, carrot, cauliflower and green peas to the curd mixture and mix well. Leave it for 10–15 minutes so that the spices get absorbed properly into the vegetables. If you want, you can prepare this mixture in advance and keep it in the refrigerator.
Heat oil and add all the spices in it. Then add fried onions and marinated vegetables. Add some water and cook on low flame. When the vegetables are half cooked, spread rice on top. After this add saffron milk, mint and biryani masala and cover it.
Apply flour on the edge of the lid and seal it well. Place the pan on the pan and simmer on low flame for about half an hour. During this time, the flavors of spices, rice and vegetables mix together and start giving a tremendous aroma. Once the biryani is cooked, mix it gently and serve it hot.
