How To Make Carrot Apple Pumpkin Soup Recipe: Every parent wants to make something healthy and tasty for their children in winter. Material:
1 medium pie pumpkin, or 2 cups (480 ml) pumpkin puree
2 teaspoons (30 ml) olive oil
1 small onion, chopped (about 1/2 cup)
6 garlic cloves, chopped
3 medium carrots, peeled and chopped (about 1 cup)
1 medium apple, peeled and diced (about 1 cup)
1 medium baking potato, peeled and chopped (about 1 cup)
2 teaspoons grated ginger
1 teaspoon maple syrup
3 teaspoons salt
1 teaspoon black pepper powder
2 teaspoons dried parsley
1/4 teaspoon cinnamon powder
Pinch of red chilli flakes
4 cups (960 ml) chicken or vegetable broth
1/2 cup (120 ml) heavy cream
113 grams goat cheese
Method of preparation:
-If you are not using pumpkin puree, preheat the oven to 350°F (177°C). Cut the pumpkin in half, remove the seeds and place it filing side down on a baking sheet. Roast for 50-60 minutes. When it cools down, puree it in a mixer or food processor.
-Heat olive oil in a large sauce pot. Add onion and garlic to it and fry for 5 minutes until it becomes soft. Then add carrot, apple, potato and ginger and cook for 5 more minutes.
-Add maple syrup, salt, black pepper, oregano, cinnamon and red chili flakes to all the vegetables and mix well. Add broth and bring soup to a boil. Then reduce the flame and cook covered for 15-20 minutes.
-Pure the soup smooth in a blender or food processor. Then pour back into the pot and stir in the pumpkin puree.
Switch off the gas, add heavy cream and goat cheese and mix. Serve the soup hot. This soup with crispy bread will become children’s favorite.
