Now start making halwa: First of all, put a big kadai or non-stick pan on the gas and add 3–4 tablespoons of ghee in it. When the ghee is hot, add grated carrots. Fry the carrots on medium flame for 5-7 minutes. Roasting carrots removes its raw aroma and gives good flavor to the halwa.
Mix milk: Now add milk to the carrots. Let it cook uncovered on medium flame. Keep stirring occasionally so that the milk does not stick to the bottom. In about 15-20 minutes the milk will start thickening and reducing. When the milk almost dries up, the preparation of halwa starts.
Sweet and flavourful; When the milk dries, add sugar as per taste in the halwa. Adding sugar will make the pudding a little thin, so cook it for some more time. Gradually the pudding will start thickening. After this add cashews, almonds, raisins and mix. Also add cardamom powder, it gives wonderful aroma to the halwa. When the halwa starts releasing ghee and its color starts turning light red, then understand that the halwa is ready.
