Ingredients for making pickle: 3-4 medium onions, cut into thin pieces. 3-4 green chillies, cut into small pieces, some finely chopped coriander, 8-10 garlic cloves and 1/4 cup peanuts. After this just start the pickle making process and a delicious pickle is prepared from all these items.
To prepare the pickle, first grind the peanuts and garlic coarsely in a mortar, which will give thickness and spicy taste to the pickle. After this, put chopped onion, green chilli and coriander in the bowl and add crushed peanuts and garlic to it. Then add 1 tablespoon white sesame seeds, salt as per taste and 1/2 teaspoon black salt and mix well.

To prepare the spices, take 1 tsp chaat masala, 1 tbsp coriander powder, 1/2 tsp turmeric, 1 tsp cumin powder and 2 tbsp Kashmiri red chilli powder and make tadka. These spices add spiciness and red color to the pickle. Note, Kashmiri chilli is not spicy in taste, but is brilliant in colour.
To make the oil and lemon tempering, heat 1/4 cup oil in a pan and add it to the mixture. After this, add lemon juice as per taste, which helps in making the pickle soft and sour.
To serve and store the pickle, let it set for 1-2 minutes so that the spices get absorbed into the onions properly. Then serve it with hot paratha, puri, dal-rice or your favorite dish. It can also be stored in an air-tight container in the refrigerator for 4-5 days. Keep in mind that this pickle is meant to be eaten immediately. The mixture of peanuts and sesame seeds increases the crispness and taste of the pickle.
