Ingredients for making tricolor casserole
3 cups Basmati Rice
1 inch cinnamon stick
1 cup orange juice
1 cup onion
50 grams Green Coriander
1 tbsp grated coconut
1 cup grated cheese
1 cup ghee
3-4 green chilies
A little ginger
1/2 cup Green Peas
Salt to taste
Little orange color
Method of making tricolor casserole
To make tricolor casserole, first divide the basmati rice in two. Wash 2 cups in one part and one cup of rice in the other part and soak them separately for 30 minutes. Now heat 1 teaspoon of ghee in a pan. When the ghee gets hot, add cloves, cinnamon and cardamom. After all these spices are fried, add 2 cups of rice to it and fry it for 2 minutes. Then add 4 cups of water and cook the rice. Keep in mind that the rice does not stick together. Now divide the ghee into three parts and make three different types of rice with the help of it.
For white rice
To make white rice, first heat ghee in a pan, add onion and fry it till it becomes pink. When onion is fried, add grated cheese and salt and stir it for a while. Then add 1 cup of cooked rice in it and mix it well. White rice will be ready.
For green rice
To make green rice, firstly grind green coriander, coconut, green chillies, ginger and garlic and prepare green mixture. Then heat a spoonful of ghee in a pan. When the ghee gets hot, add cumin and green paste made into it and mix it well. Now add green peas, salt and 1 teaspoon of water, cover and cook the peas and mix well by adding 1 cup of cooked rice.
For orange rice
Add the remaining ghee and fry for a while by adding grated carrots to it. After this, add soaked rice and fry it. Cook rice by adding orange juice, 1 cup of water, salt and 7-8 drops of orange color.
Serve tricolor casserole like this
Now put ghee in a big vessel and add orange colored rice. Then put grated cheese on it. Then spread white rice over it. Now spread grated paneer. Likewise spread green rice and spread grated paneer on top. Now let it cook on low heat for 10 minutes. Then remove it from the heat. The tricolor casserole is ready. Serve it in a plate with raita and papad. Children will be happy.
