Making Amaranth Laddus starts with roasting the Amaranth seeds. First of all, the raw seeds are cleaned and roasted on medium flame in a heavy bottom pan. While roasting, the seeds slowly start swelling and become light golden in colour. This step is very important because it gives the seeds a special fluffy and crispy texture in the laddu. These seeds should be stirred continuously so that they roast evenly and do not burn. This process is like popcorn, in which the seeds appear swollen.
After this, keep the roasted seeds aside and heat ghee in the same pan. Add jaggery to it and melt it on low flame. The jaggery will gradually take the form of a thick and light syrup. This syrup works to bind the seeds of laddu and makes the taste of laddu sweet and attractive.

After the jaggery melts completely, turn off the flame. Immediately add swollen amaranth seeds and add cardamom powder or favorite dry fruits. It is important to mix it quickly so that the jaggery sticks to each seed evenly. This makes laddus completely set and tasty.
Now when this mix cools down a bit, apply ghee on your hands and make round laddus. By pressing the mixture firmly, the laddus set well and retain their shape for a long time.
Let the prepared laddus cool completely. Then keep them in an airtight container. When stored properly, laddus remain fresh, crunchy and tasty for many days.
