This traditional and nutritious sweet is made from wheat flour, ghee, sugar (bura), dry fruits and gum. To make this, gum is first fried in ghee and ground coarsely. Then the flour is fried and fried nuts are added to it. When the mixture cools down, laddus are prepared by adding powdered sugar, crushed gum and other ingredients to it. Punjabi chefs say that by giving this pinni to children in winter, they will not feel cold at all.
Ingredients required to make Punjabi Pinni include: 1.5 cup wheat flour, 1 cup ghee, 1 cup powdered sugar (bura), 5 kg gum, 10 chopped almonds, 10 chopped cashews, 10 raisins, 1 teaspoon cardamom powder and 1 teaspoon dry ginger powder (optional).
Heat ghee in a pan and add gum and fry it on medium flame until it starts puffing up and becomes crisp. After this, take out the gum and let it cool and then grind it coarsely.

Heat the remaining ghee in the same pan. Add wheat flour to it and fry it on low flame until aroma starts coming from it and its color becomes light golden.
Add chopped nuts to the roasted flour and fry for 2-3 minutes. After this, turn off the gas and let the mixture cool down a bit. In this way your basic mixture will be prepared. Now you should pay attention to some important things.
When the mixture becomes slightly hot, add crushed gum, cardamom powder and powdered sugar to it. If you are using dry ginger powder, then add it to the mixture now.
Mix the mixture well and make small laddus. If you wish, you can garnish with poppy seeds or chopped nuts. Now store the pinnis in an airtight container. These do not spoil for about 2-3 weeks. You can give it to the elders and children of your house and its taste will also be amazing.
