In the Terai areas of Lakhimpur Kheri district of UP, farmers grow a lot of Amaranth greens during winter. These days its demand is high in the markets. Consumption of Amaranth increases the immunity of the body. It contains many types of proteins.
You can easily grow Amaranth greens in pots also. For this, a 10 to 12 inch pot is sufficient. The soil of the pot should be loose and fertile. Mix 50% garden soil, 30% compost and 20% sand, so that there is good drainage.
To sow Amaranth seeds, moisten the soil slightly. Sprinkle small amaranth seeds on top. Cover the seeds with just a 1 cm thin layer of soil and water lightly. Keep the pot in a place where it gets sunlight for 3-4 hours daily. Water every day in small amounts, but take care that water does not stagnate in the pot.

Seedlings will start emerging in 7–10 days and greens are ready for harvest in 25–30 days. Keep loosening the soil near the plants from time to time and add home-made manure or vermi-compost once a month. By timely harvesting, the plants continue to give leaves for a long time. In this way, with a little care, you can easily grow fresh and green amaranth at home.
