Ingredients to make Indori Poha
Poha (Chivda) – 2 cups
Onion – 1 (finely chopped)
Green chilli – 2 (chopped)
Turmeric – ½ tsp
Salt – as per taste
Refined oil – 2 tbsp
Mustard seeds – ½ tsp
Curry leaves – 8-10
Peanuts – 2 tbsp
Cumin – ½ tsp
Sugar – 1 tsp
Lemon juice – 1 tablespoon
Green Coriander – 2 tbsp
Sev – to decorate
Pomegranate seeds – to decorate
Method of preparation
Wash and prepare poha
First of all, wash the poha gently in water. Do not keep it in water for too long, otherwise the poha will become wet. After washing, keep it in a strainer and let the water drain.

Heat oil in a pan. Add mustard seeds, cumin seeds and curry leaves in it. Then add peanuts and fry until light golden.
add onion and spices
Now add onion and green chillies and fry till it turns light pink. After this add turmeric and salt.

Add prepared poha and mix gently. Add sugar and lemon juice in it. Cook on low flame for 2-3 minutes.
Garnish and Serving
Switch off the gas and take out the poha in a plate. Garnish with green coriander, sev and pomegranate seeds.
Specialty of Indori Poha
It has mild sweetness and sourness of lemon, which gives it a different taste.
The sev and pomegranate added on top make it crunchy and colourful.
It is perfect for breakfast as it is light and energetic.
tips
Do not fry the poha for too long, otherwise it will become dry.
If you want, you can also add boiled potatoes or carrots to it.
Sprinkle cumin powder and chaat masala on top for real Indori flavour.
