Benefits of eating old rice
-According to the Ministry of AYUSH, Government of India, in Ayurveda it is advised to eat old rice, because it provides more benefits to health than new rice. In such a situation, you must eat rice that is at least one year old.
-According to Ayurveda, if old rice is stored properly, it does not lose moisture. Due to less moisture, it becomes easier to digest. Stomach does not feel heavy after eating. At the same time, new rice contains more moisture as well as starch, due to which some people start having problems like gas, bloating, heaviness, indigestion etc. Old rice is light and digestible.
-Another advantage of old rice is that it cooks well. Its grains do not stick to each other while cooking. Whatever you make with this rice, pulao, simple rice, khichdi, all become fluffy and delicious. In Ayurveda, it is considered ‘Laghu’ (light) and ‘Snigdha’ (smooth), which balances Vata-Pitta doshas.
-If you have constipation problem then eat old rice. In summer and rainy season, it is more beneficial to consume old rice instead of new rice. New rice has more moisture and there is a risk of fungal infection.

Diabetic patients should not eat rice at all, because it increases the sugar level rapidly. Whatever rice you want to eat, old or new, eat it only after consulting a doctor. If your weight is increasing continuously then eat rice in very small quantities. Rice is high in carbohydrates. Eating too much increases calories, which can lead to weight gain.
