Jaggery sellers from Tirunelveli, Tamil Nadu are selling palm jaggery and ginger mixed jaggery, which is being liked very much by the people of Bokar.
Helpful in increasing immunity
Jaggery seller Kanan says that he has two types of jaggery available. Traditional jaggery prepared from palm and special jaggery with ginger mixture, both the jaggery are priced at Rs 200 per kg and customers can use it with dishes like sweets, kheer, laddu. At the same time, jaggery with ginger is widely used in the form of tea and decoction. It also helps in increasing immunity.
Jaggery is prepared in this way
Regarding the process of making palm jaggery, Kanan told that in their language jaggery is called ‘Karupatti’ and to make it, first of all the artisans climb a tall palm tree with a sharp knife. The bark of the tree is carefully peeled and the fresh juice is collected in an earthen pot, then after coming down, this juice is filtered with the help of a sieve. It is put in a big pan and cooked continuously for an hour. When the juice becomes thick, it is poured into coconut shells and frozen and only 150 grams of jaggery is prepared from about one liter of palm juice. Whereas for ginger jaggery, it is prepared by adding ginger paste later.
Kanan further said that the sale of palm jaggery is very good here and he easily sells 50 to 60 kg of jaggery every day. When the stock runs out, he immediately orders new goods through train and vehicle, so that the demand of the people remains and for the time being, he will continue selling by staying in Bokaro throughout the cold season.
