Ingredients
- Cabbage – finely chopped (about 2 cups)
- Peas – ½ cup (fresh or frozen)
- Onion – 1 medium size, finely chopped
- Tomato – 1 medium size, finely chopped
- Green chilli – 1-2 (as per taste)
- Ginger-garlic paste – 1 teaspoon
- Turmeric powder – ½ teaspoon
- Coriander powder – 1 teaspoon
- Cumin – ½ teaspoon
- Oil – 1–2 tbsp
- Salt – as per taste
- Fresh coriander – for garnish
Method of preparation (Quick Steps)
This recipe is ready in just 15 minutes. To save time, keep all the ingredients ready in advance.
1. Prepare tadka
Heat oil in a pan. Add cumin seeds in it and let it crackle. Now add chopped onion and ginger-garlic paste and fry until it becomes light golden.
2. Fry the spices
Lower the flame and add turmeric and coriander powder. Cook the spices for about 1 minute so that the rawness goes away. (Note: You can add red chili powder as per your choice at this time.)
3. Add vegetables and cook
Now add chopped cabbage and peas. Mix well. Cover the pan and cook on low flame for 5-7 minutes. Keep stirring occasionally so that the vegetables do not stick to the bottom and cook evenly.
4. Add tomatoes and chillies
When the cabbage becomes slightly soft, add tomatoes and green chillies. Cook without covering for 2-3 minutes so that the tomatoes become soft and get mixed into the gravy.
5. Serve
Turn off the gas, add salt and sprinkle fresh coriander on top. This vegetable tastes best with roti, parantha or rice.
