Gondh ki Pand Recipe: In Rajasthan, Gondh ki Pand is a traditional medicinal mixture that keeps the body strong from within in winter. Housewife Sarita Devi told that making gum paste is very easy. It is not only tasty but also very beneficial for health. The ingredients required to make it are edible gum, mixed dry fruits, which mainly include almonds, cashews, walnuts, desi ghee, two cups of cream milk, half cup of desiccated coconut, three cups of jaggery, one teaspoon of Pippalimool powder, one teaspoon of dry ginger powder, half teaspoon of cardamom powder and half teaspoon of nutmeg powder.

First of all grind the edible gum coarsely. Similarly, grind all the dry fruits coarsely and keep them aside. Now add two spoons of desi ghee in a pan and fry the gum on low flame. Keep stirring it continuously so that the glue does not burn. Fry the gond until it swells and becomes light golden and crisp. After that turn off the gas and let the gum cool down. It is a crunchy and fluffy gum base, which is used in making penda.
After this, add two cups of cream milk in the same pan and cook while stirring continuously, until the gum completely dissolves in the milk. Now add desiccated coconut, ground dry fruits, jaggery, pippalimool powder, dry ginger, cardamom and nutmeg powder and mix well. Cook the mixture until it starts leaving the pan. Turn off the gas and when it cools down, fill it in an airtight container and keep it in the refrigerator. Its biggest feature is that it can be preserved for 15-20 days.
Gum tree helps in increasing blood in the body, boosting immunity and strengthening bones. Regular consumption provides relief from back pain, joint pain and weakness. It is considered especially beneficial for women after delivery, the elderly and those who do physical labor.
