This combination of sour, sweet and mild spicy taste not only soothes the tongue but also increases appetite along with food. In the winter season, when the body needs both nutrition and immunity, Amla Chunda becomes a perfect option.
Amla is rich in Vitamin C, antioxidants and many medicinal properties. At the same time, this chunda along with jaggery, sugar candy and spices helps in digestion along with taste. The biggest feature of home made Chunda is that it does not contain any kind of chemical or preservative. This is the reason why this recipe becomes a beautiful example of both taste and health, which people of all ages eat with great enthusiasm.
Villager Geeta Devi has shared the recipe of Chunda made from Amla. He told that it is very easy to make. For this, first the necessary ingredients have to be taken. The ingredients include gooseberry, sugar candy powder, cloves, whole black pepper, two small pieces of cinnamon, finely chopped jaggery, half spoon of black salt, salt, one spoon of dry ginger powder, one fourth spoon of turmeric, half spoon of Kashmiri red chilli, half spoon of cardamom powder.

Now making Amla Chunda starts with washing the Amla thoroughly and grating it. After this, sugar candy powder has to be prepared, which keeps its sweetness natural and light. First of all, a layer of sugar candy powder is spread in the pan, grated Amla flakes are added on top of it. Similarly, after making a layer of sugar candy and gooseberry, add cloves, whole black pepper and small pieces of cinnamon, which further enhances its aroma and taste.
Now this mixture has to be cooked on low flame for about 3 minutes. After this, finely chopped jaggery is to be added, which gives local sweetness to the chunda. Also black salt, common salt, dry ginger powder, turmeric and Kashmiri red chilli powder are added and mixed well. Keep in mind that the chunda should not be too thick, but should be kept slightly juicy.
In the last step, cardamom powder and melon seeds are added and the gas is turned off. As soon as it cools down for a while, the aromatic and flavourful Amla Chunda is ready. This chunda is very tasty and wonderful.
