Matar Nimona Recipe: Matar Nimona is a traditional and very tasty winter vegetable, which can be easily made at home from fresh peas. Coarsely ground peas along with ginger, garlic and green chillies are fried in ghee and cooked with spices and potatoes. This recipe, prepared on low flame, gives a special taste when eaten with paratha or rice.
Matar Nimona prepared during winter season is very tasty to eat. The recipe to make it is very easy. First of all we have to take 200 grams of peas and then grind them all in a mixer along with ginger, garlic and green chillies. While grinding, keep in mind that water should not be added at all, because peas should not be ground finely.
Now keep the pan on the gas and add about 3 spoons of ghee in the pan. After the ghee is heated, add the prepared paste into it and fry the paste on low flame for 10 to 12 minutes until it turns golden. After this, take out this roasted paste in a plate.
Now put the pan again on the gas and add 3 spoons of ghee in it and heat the ghee again. Now add asafoetida and cumin seeds in it. When the cumin seeds become golden, add chopped potatoes to it. After the potatoes become golden, add onion to it and fry the onion lightly.

Now after this, very finely chopped tomatoes have to be added to it. You can also add turmeric powder, coriander powder and salt as per your wish. All these have to be fried well. It is important to keep in mind that the masala should keep frying until it leaves oil.
Now add fried pea paste and whole green peas into it. Mix it well with spices and fry it well for about 5 minutes. Add about 2 cups of water in it and cook on low flame for about 15 minutes until the potatoes are completely cooked. After cooking potatoes, add garam masala and chopped coriander. Under this process, Pea Nimona is prepared and it can be eaten with Paratha or rice.
