Brinjal Bharta made from sour winter tomatoes is everyone’s favourite. For this, roast 2 brinjals, one potato and three big tomatoes. Put oil in the pan and add asafoetida, ginger and garlic. Fry onion and then add mashed brinjal, potatoes and tomatoes. Roast for some time, add basic spices, salt and finally garnish with green coriander.
